I always say that I get pretty excited at anything that gets confirmed by Google. Well Google’s Gary Illyes confirmed on Twitter that it makes no difference if you decide to use pipes ( | ) or simple commas within your title tags.

Personally I have always liked using pipes inside title tags to help create a better visual organization. Using them inside actual URLs may create some issues on different servers, and with different scripting languages – so that’s probably not a good idea still. Alas if you want to setup your title’s as Page Name | Website Name – go for it. Google said it’s ok.
